Sweet potato fries & avocado dip

sweet potato friesI have always loved any kind of potatoes however they were cooked.  But with sweet potatoes, I never understood why more sugar was forced upon them when they are already sweet.  The first time I enjoyed really great sweet potato fries was in Ithaca, New York when I took my son to hockey camp.  Soon I began to bake them in the oven, gradually seasoning them until I found that smoked paprika was my new favorite spice and discovered that it complimented sweet potatoes just right.
Smoked paprika is ground sweet bell peppers that are dried in the sun, then smoked over a wood fire to give it that hint of smoke.
Ranch dressing seems to go well with sweet potato fries, but this avocado dip is a healthier alternative.

 For the sweet potato fries

4 medium sweet potatoes
2 tbsp extra-virgin olive oil
2 tsp smoked paprika
1 tsp garlic powder
Pinch of chipotle chile powder
2 tbsp chopped fresh rosemary
Freshly ground pepper
Sea salt

Preheat the oven to 425F.

After scrubbing and patting dry the sweet potatoes cut them into wedges and place on a bake sheet.  Toss with the olive oil.  Mix the dry ingredients and sprinkle on the sweet potatoes.  After tossing to coat well, spread in a single layer and roast in the oven for 30 minutes.

For the avocado dip

2 avocados
½ cup buttermilk
2 tbsp of freshly squeezed lemon juice
2 garlic cloves
1 tbsp of cilantro
½ tsp of fresh chives
Freshly ground pepper
Sea salt

Put all ingredients in to a Vitamix, or blender, except for ½ of the avocado.  Pulse the mixture until combined.  Chop the ½ of avocado and stir into the dip.
